Nope I have no grace for it. I work in the food industry and been working shirt handed for most of the last year. Date checks are not something you can skimp on and are almost certainly on the supervisor check list. Product should also be clearly labeled so that it's as simple as opening the chiller and looking down the racks and going yep they are all labeled correctly. This is no different from a safety standpoint then if a ride op went we are short handed and the board is green so no need to check the restraints send the ride. Also it's a potentially major cost if the health department catches you they will make you trash everything not dated. I know of a place that got caught with major dating and temp records issues the health department made them throw out over SEVEN THOUSAND dollars worth of food just as an example.

Depends on what it's. major food items will not only get tossed at the end ofvthe day but on a time bases while things like the sauces will be prepared in bulk and used over the course of a few days. You are not going to get yesterday's fries, chicken, ribs, pizza, pretzel but you might get a cup of sauce that was from yesterday or even possibly coleslaw.

I know for a fact that they do not toss the meats at the end of the night. Fried foods? Yes. But not everything.

Of all the times we have eaten at Trapper's, my wife has had a salad exactly once.

She said it was ... okay. Kinda what one would expect from a facility whose identity begins and ends with meat.

I am not personally aware of any other human being ever getting a salad there.
 
This is off-topic, but has anyone ever tried a salad from Trapper’s? I’ve always been curious, but too afraid that I’ll just end up disappointed.
I don't think I have tried Trappers ever but in general I have found the park salads as ok but not anything special.
