Yea, I took a pic the second night but forgot to post it. But yes the sauce is back and now included. The rolls are about half the size though.

The rolls currently are probably just something they can get from Sysco. From what I understand they haven't brought back any bakery staff for this event, so they don't have the ability to make them in house. They should go back when they are more back to normal
 
You can also get similar cakes order frozen from several sources so it's possible that they went that route.

Something g is fishy then because both the chocolate and carrot cake look exactly as they always have and the taste is the same. So either they haven’t been making them at the park or they have staff in the bakery. I will say the second night at Trappers there was a muffin, we asked what it was and she had to split it open because they said they didn’t know. Turned out they said it was a bacon muffin.
 
Related - I remember seeing somewhere that there's a brand called Chef's Special or something like that that sells frozen dessert and/or entrees for restaurants to plate up and serve; so if you see that phrase before a menu item then although it's accurate, the reference is to the brand and not the cook/chef in the back actually cooking.

Then they may very well be made in the park I am prediabetic so I stay away from the cakes and was just judging by appearance which is pretty close to some commercially available ones but they definitely were being made in the park last year so if they taste the same they may very well have brought in enough staff to produce some. Honestly it would not take as many as some people would think.

Like I said I only know that initially they hadn't bought back any one from the bakery but it's possible that they brought one or two back
 
In the scale of costs, how much more would it be to bring the bakers back, run the equipment, and order the appropriate ingredients vs just buying the equivalent items from a purveyor?

It's probably more a question of scale. Baking items for a max crowd of 1000 people x% of which will buy a dessert. The question is; what is the necessary quantity to negate the expense of purchasing the desserts.

Basically, at scale, baking 100 muffins takes the same amount of the baker's time as baking 300, but if they can only sell 100; then the cost of that salary might not justify the expense.

@Jahrules, kind of what I was thinking.

These prepared items are generally made and priced for mass-scale food service use so they're always within the reasonable cost range for the park to use, just like any regular restaurant that may also use them.

The difference would be perceived quality and if they can sell for as much profit as items made in-house... And even with 2k guests a day each buying at least one apiece, that may not be a large enough order for there to be any bulk discounts.
 
Another possibility is that they just used the people that are currently back and had them make the cakes from the recipe. Then they placed them in the freezer until they put them on the line. Honestly for the number of cakes they are probably selling they can probably just make a small number and it will last then a few weeks
