I had is in the form of fried bites in New Orleans and in the form of grilled meat eat on a stick in South Carolina.If is cooked correctly it is quite good, however most places over cook it and deep fry. It gets tough and dry. I've had it in sausage at Disney, in a chili in South Carolina, and one one tasty grilled tail stake down in Hilton Head. I compare more to the texture of lobster. It can have a fishy gameyness to it. But I do still like it. You're right it is nothing like chicken.
