My impression was always that the intent of the F&WF when it was created was to provide unusual flavors and cuisines, to which average BGW guests might not have easy, regular, or any access. It seemed to be marketed to foodies.

My guess is that the perennial success of the most mundane dishes, like the Canadian mac 'n cheese, has probably lead to this unfortunate move away from the exotic and towards the familiar.
What is the possible purpose in serving the same food most guests make in their own kitchens and can buy up the street? If I want Virginia ham, I will make myself one for much less money.
