I am 6’5” and went to Tokyo Disney parks back in 2019, and I had some issues with some of the rides due to my height.
Raging spirits coaster in Disney sea has a maximum height limit of 6’5” and I was just above that line they check your height at. They are VERY strict about this one.
Two rides that I particularly had an issue with that was unexpected was Journey to the Center of the earth and splash mountain. On journey to the center of the earth, the legroom is very tight in every row on it. It uses the same ride system as test track, so I was expecting same legroom, boy was I wrong! Splash mountain was awful to the point that I couldn’t fit. While it uses the same boats and lap bar as magic kingdoms version, they have seat dividers AND “crotch notches” that make it hard to move my legs around to get the lap bar down. When I told the ride operator I couldn't ride, they all made me exit through the queue; they wouldn't let me out of the exit.
Another one I had difficulty with but it wasn’t as horrible was monsters inc ride and go seek. It was awkward legroom wise but if there wasn’t someone seated next to me it was tolerable. A cool shooting dark ride that’s hard to miss!
I’m also quite a large guy, and so I had some weird interactions with cast members at both parks for some rides that I didn’t have issues with. On soaring:fantastic flight (Tokyo’s version of soarin’), I had a cast member after the preshow insist I would not be able to fit on the ride. When I got to the seat, I had no issues with the seatbelt- just as accommodating as on the other soarin’ attractions. I also had a similar interaction at haunted mansion, but IMO the lap bar doesn’t have to come down as far on this Omni mover like the US parks versions do.
Other than those issues that had come up, I had no issues with fitting on rides like I have had in any other Disney park I’ve been to.
