Why the complicated name? I love Le Grande Glace; simple and elegant. As my husband just said, why spend so much time changing a name of an ice cream shop but none on announcing a coaster?

It's not just changing a name, it's relocating to the Bistro location and expanding and changing the entire menu, it is essentially a whole new thing. The only similarity is that they are serving ice cream as the main treat.
Don't try to confuse this as if the park announced a new ice cream shop, because they didn't announce anything. They added a paragraph on an obscure web page. They were probably working on plans for this shop during Christmas Town. They didn't need a lot of effort to write a quick description.

Ok, I get that. I wouldn't have minded keeping the name though, it was such fun. Even if in a new location. Ah well. I'm happy as long as there is hand-dipped ice cream somewhere in the park. Wonder what they will do with the old ice cream building then?

I say obscure because you need to click through a handful of things before actually getting to it. It's not like it's on the front page.

I get the hand-dipped stuff nearly every time in the summer. The soft serve is good too, but I like the variety of flavors offered in Le Grande Glace.
Speaking of which, I hope this new place offers the same variety of flavors that La Grande Glace did, and it definitely better not all be chocolate. I would be very dissapointed if they replaced La Grande Glace with a place that only has a limited variety, and revolves completely around chocolate.(not everyone likes chocolate, you know)

I don't see any reason to believe that they would limit their selection to chocolate. I interpreted the new name as a way of emphasizing the use of Ghirardelli.

This new eatery was recently found out by browsing under the park’s culinary offerings on their page. The restaurant will feature ice cream, Ghirardelli chocolate based items, smoothies, and more. The newest update on this restaurant is how the entrance has been relocated.
For years, the entrance to the building had always been hidden away behind Griffon Gifts. Some forum members, like myself, speculated the restaurant did so poorly in the past because it was hidden away off the main path a bit. Well, the entrance was relocated towards the main pathway to give it more exposure. The part of the building that was the kitchens is now the entrance to the building. This will also be the largest ice cream shop in the park and does replace La Grande Glace.

I was looking through The Old Country Promo video yesterday, for something else, which just happened to be in Aquitaine. While looking through the Aquitaine part of the video, they had a shot of what Cafe Lulu used to be called and it just so happened to be Salon de Josephine(which is confusing, salon means a living room, or other gathering area). I suppose Bistro 205's new name might have been conceived from looking at past Aquitaine names. I don't know, just something interesting I noticed.
