Because those places also have lines, when the Festhaus sees crowds (aka high customer counts). And a goal is to sell beer quickly, minimizing the odds of missing a high margin sale due to customer discouragement.
Also, people commonly walk up to the side of those beer service areas anyway. They don’t get turned away, as this thread demonstrates. Might as well make it official.
Those ends that people walk up to and get drinks were meant to do that, there’s even a “beer” sign that hangs there. I have always thought it was a bad practice as it slows up the food line. Many times you would see the food line with 2 to 3 people with their food waiting for drinks when the drink person was serving those walk ups. The real question is will they staff them?
The other change that is happening is that they are making the soda fountains self serve. The new beer taps and self serve soda should significantly speed up the food line as there shouldn't be a significant wait for drinks.
