CK, they finally fixed the "beef flight" typo on the Belgium menu. Sorry I didn't get a pic of the whole thing.

So how does this work? Pre-pay or give them a card to charge and they do...

Also are there pass discounts on these offerings?

Yes to both. I just gave them a card to "link" to my wristband.

As far as the pass discount, you get the normal 10% off, but you MUST present the pass (just like your would normally) at each stand BEFORE you have them scan your wristband. This way, you're not accidentally charged full price.
