I can start making reservations next week and TREX will be the first restaurant of my visit when I fly in that morning. I'll be spending the day at SWO then hit up Disney Springs.

SciFi Drive-In might be my favorite theme park restaurant of all time.

Pro tip: you can still eat there without a reservation - they have walk up service and you will be seated in the back of the theater.

We dis the Star Wars dessert party last year and really liked it. We just got back from another trip and walking through the Launch Bay, I talked to a girl setting up and they ha e improved on what was already great.
My cousins son used to be the chef at Trex and now he is a chef at Yek and Yati. He has worked for Disney for quite a while now. I will also say with FP planning, we never waited in a regular line (at any park)other than the extra magic hours night at MK, which the rides we did were still pretty short. One day we start on one side of the park, and will to our way around until we are tired, and the next day that we go, we start on the other side.
We also enjoy Garden Grill for breakfast.
We went 3x in a year, I’m happy to help more if I can!

I'm sticking with TREX. I know the food isn't going to be that great, but I'm a dinosaur nerd.

I was looking at Marrakesh and I still might change to it. Spice Road just seemed to have more of what I might like.
Are any kids going with you on the trip? If so hit up a a character breakfast or lunch/dinner (Donald's Safari in Animal Kingdom, Crystal Place in Magic Kingdom and Coral Reef in Epcot doesn't have char are my go to's with my kids and Chef Mickey is good but waaaaaaay to crowded and seems to take a lot longer than most.) And as everyone has recommend Sanna is great and yes get the naan platter.
 
In 30 years I've personally been over 100 times to WDW, DVC is awesome in that aspect. Honestly the best advice for both newbies and people that go frequently or infrequently, don't try and do too much, don't try and pack "everything" in, you won't see it all, you won't do everything on your list for a variety of reasons. All you'll end up doing is wearing yourself out and get frustrated. Oh and always have a backup plan for anything you decide to do.

Oh and make sure you get the Dole Whip at MK or Caribbean Beach, its 100x better than the crap BG sells. You can even get it spiked at CB.

I will not be going with any kids and this is most likely going to be a solo trip for me. I'm only planning one character meal at this point just for a rope drop benefit.

Are you staying at a Disney resort or off site? I have a couple go to for both. The offsite spot is only 4 miles from Sea World. You can DM me if you want to know anything else.
 
Were you able to get all the dining reservations you were striving for? I have a pretty heft list of reservations i'll need for my trip next September but of course I can't book anything until March.
 
The only one I haven't been able to get yet is Garden Grill for breakfast. Even if I don't manage to get it, I'll still be able to get everything done since I'll be there two days.

Update that no one asked for-

After some budgeting and consulting from awesome people, it's going to make the most sense to get an annual pass. The various discounts make up for the price, plus I can get pics with Stitch and reacting to to subtle racism of Splash Mountain.

I also have all the reservations I need after haphazardly checking Garden Grill for breakfast multiple times. The renovation schedule isn't looking too bad either with just Tommorowland Speedway and the train so far.

Speaking of trains, I wish Hollywood: Rip Ride Rocket would take a train out of here.
