One of the employees there said it's going to be open every night of CT. She said they were also making food there for some other venue...is there a kitchen in COS? If not, I'll guess there.

No kitchen in COS, they use warmer boxes to take food there. Same with when they were doing the HOS Vampire Point dining.

The park plans on this place being open far more than it normally is. I saw it open a number of times through the spring and summer for lunch and then it was closed when I went by later in the afternoon.

If I had to guess this restaurant and La Cucina are only open for short times because they don't have enough business to justify them staying open. It's also possible that they are closed some days to help other locations be better staffed.

To answer another question, COS doesn't have a kitchen. It just has a serving room with some coolers and prep space. Everything is cooked in O'Tators.

I really do think that this location is very poorly effected by it's menu. It's a very heavy menu that is popular when its cold like during CT but isn't very popular the rest of the season.
 
We ate there for the first time on labor day. I thought it was excellent. I like the non traditional food options over the IMO crappy pizza and burgers
 
My kids loved being able to build their own dish.

My daughters tater tots with mushrooms and chicken were quite yummy actually.
