I've been sitting on this a while but the pictures never turn out. So here's what's up: back in the Fall, Bed Bath went out of business in Manassas. Sitting on the 70% off shelf was, lo and behold, a sous vide. I've always wanted one but at the typical entry price of a couple hundred dollars, forget it. At this price though, I had no choice but to buy it.

Now a little back story. I rarely cook protein on the stovetop. Most of the time it ends up overcooked or raw despite my best efforts. I've always felt like I was trying to hit a bullseye on a target attached to the side of a light rail car. So I don't do it. Which is why slow cooking and barbeque has always appealed to me.

Until now.

Ladies and Not-so Ladies, after four months of extreme gourmet cooking I am pleased to tell you: the sous vide is a game changer. Behold, the perfect medium rare ribeye cooked with zero effort. I dropped it in the bath at 10am, and seared it at 6 when I was done with work.

Its pretty fantastic as a single cooking tool. However, I use it in conjunction with my smoker and my bbq has graduated to a whole new level. I made a Texas brisket for Thanksgiving that was basically the immaculate conception in my mouth.


Tangent: Costco has Prime brisket for 2.80 a pound as of my visit yesterday.
